I want to be the first person in South Carolina to farm duckweed for human consumption. Duckweed is high in protein, vitamin B-12, and anti-oxidants. Duckweed is native to South Carolina and looks like a microgreen. It has a fresh look and earthy smell, a neutral to slight peppery flavor, and a delicate texture. My duckweed is grown on John’s Island in a clean, hydroponic environment
inside a greenhouse where I closely monitor everything that goes into and comes out of the system. My product is washed, sanitized, and air-dried before packaging, therefore ready to eat straight from the container. When kept refrigerated, it could have a shelf-life of several weeks.
