Grilled BBQ Tuna
Ingredients
Mustard Q Sauce (Makes about 4 cups)
- 1¼ cups cider vinegar
- 1¼ cups prepared mustard
- ¼ cup ketchup
- ½ cup Roddenberry’s molasses or honey
- ½ cup water
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Tabasco® hot sauce
Country Ham Green Onion Butter
- 4 ounces country ham, cut into julienne strips
- 8 ounces chicken stock
- ½ cup chopped green onions
- 4 ounces unsalted butter
Tuna and Oysters
- Four 4½ ounce tuna loin portions
- Olive oil
- 24 oysters
- 2 cups cornmeal
- Cooking oil, for frying
Instructions
- To prepare the Mustard Q Sauce, combine all ingredients in a nonreactive saucepan. Bring to a boil over medium high heat, then allow to cool.
- To prepare the Country Ham Green Onion Butter, simmer the ham in the chicken stock until reduced by half. Whisk in the butter, then stir in the green onions.
- Coat the oysters in the cornmeal.
- Heat about 1 inch of cooking oil to 350°F. Fry the oysters for about 40 seconds. Drain on a rack and keep warm.
- Brush the tuna lightly with olive oil. Grill or sear until medium rare.
- Glaze the tuna with the Mustard Q Sauce over medium heat and remove immediately.
- Spoon the sauce onto four plates. Top each with a tuna portion, six oysters, and one quarter of the butter sauce. Garnish with chopped green onions and serve immediately.
