Grilled BBQ Tuna

Grilled BBQ Tuna

Ingredients

Mustard Q Sauce (Makes about 4 cups)
  • 1¼ cups cider vinegar
  • 1¼ cups prepared mustard
  • ¼ cup ketchup
  • ½ cup Roddenberry’s molasses or honey
  • ½ cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Tabasco® hot sauce
Country Ham Green Onion Butter
  • 4 ounces country ham, cut into julienne strips
  • 8 ounces chicken stock
  • ½ cup chopped green onions
  • 4 ounces unsalted butter
Tuna and Oysters
  • Four 4½ ounce tuna loin portions
  • Olive oil
  • 24 oysters
  • 2 cups cornmeal
  • Cooking oil, for frying

Instructions

  1. To prepare the Mustard Q Sauce, combine all ingredients in a nonreactive saucepan. Bring to a boil over medium high heat, then allow to cool.
  2. To prepare the Country Ham Green Onion Butter, simmer the ham in the chicken stock until reduced by half. Whisk in the butter, then stir in the green onions.
  3. Coat the oysters in the cornmeal.
  4. Heat about 1 inch of cooking oil to 350°F. Fry the oysters for about 40 seconds. Drain on a rack and keep warm.
  5. Brush the tuna lightly with olive oil. Grill or sear until medium rare.
  6. Glaze the tuna with the Mustard Q Sauce over medium heat and remove immediately.
  7. Spoon the sauce onto four plates. Top each with a tuna portion, six oysters, and one quarter of the butter sauce. Garnish with chopped green onions and serve immediately.
