Creme Brule French Toast

Ingredients

  • 8 thick slices Texas toast or brioche
  • 3 egg yolks
  • ½ cup granulated sugar
  • 1 vanilla bean, split and seeds scraped (or 2 teaspoons vanilla bean paste)
  • 2 cups heavy cream
  • 1 cup whole milk
  • Butter or neutral oil, for cooking
  • Powdered sugar, fresh berries, or maple syrup, for serving (optional)

Instructions

  1. In a large bowl, whisk together the egg yolks, sugar, vanilla bean seeds, heavy cream, and milk until smooth.
  2. Pour the custard into a shallow baking dish.
  3. Arrange the bread in the custard, turning to coat both sides. Cover and refrigerate for at least 2 hours or overnight.
  4. Heat a lightly buttered skillet or griddle over medium heat.
  5. Cook the French toast for 3 to 4 minutes per side until golden brown and the custard is cooked through.
  6. Serve warm with powdered sugar, fresh berries, or maple syrup, if desired.
Notes
  • Serves 4.
  • Brioche or challah make excellent substitutes for Texas toast.
  • For an even richer flavor, refrigerate the bread in the custard overnight.
