Creme Brule French Toast
Ingredients
- 8 thick slices Texas toast or brioche
- 3 egg yolks
- ½ cup granulated sugar
- 1 vanilla bean, split and seeds scraped (or 2 teaspoons vanilla bean paste)
- 2 cups heavy cream
- 1 cup whole milk
- Butter or neutral oil, for cooking
- Powdered sugar, fresh berries, or maple syrup, for serving (optional)
Instructions
- In a large bowl, whisk together the egg yolks, sugar, vanilla bean seeds, heavy cream, and milk until smooth.
- Pour the custard into a shallow baking dish.
- Arrange the bread in the custard, turning to coat both sides. Cover and refrigerate for at least 2 hours or overnight.
- Heat a lightly buttered skillet or griddle over medium heat.
- Cook the French toast for 3 to 4 minutes per side until golden brown and the custard is cooked through.
- Serve warm with powdered sugar, fresh berries, or maple syrup, if desired.
Notes
- Serves 4.
- Brioche or challah make excellent substitutes for Texas toast.
- For an even richer flavor, refrigerate the bread in the custard overnight.
