Blackberry Lime Scones

Blackberry Lime Scones

Ingredients

Scones
  • 2½ cups Adluh® all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ⅓ cup granulated sugar
  • 2 teaspoons lime zest
  • 1 stick (4 ounces) unsalted butter, very cold and cut into small cubes
  • 1 large egg, beaten
  • ½ cup plus 2 tablespoons whole milk
  • 1 cup Certified SC Grown blackberries
Egg Wash
  • 1 large egg, beaten
  • 1 teaspoon milk or water
  • 2 tablespoons granulated sugar
Lime Glaze
  • 2 tablespoons fresh lime juice
  • ¾ cup powdered sugar

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, salt, baking powder, baking soda, sugar, and lime zest.
  3. Cut the butter into the flour mixture using a pastry cutter, two forks, or your fingertips until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together the egg and milk. Add to the flour mixture and stir just until combined.
  5. Gently fold in the blackberries, being careful not to overmix.
  6. Turn the dough onto a lightly floured surface and shape it into an 8 inch circle.
  7. Cut into 8 wedges and transfer to the prepared baking sheet.
  8. Whisk together the egg wash ingredients. Brush each scone with the egg wash and sprinkle with granulated sugar.
  9. Bake for 18 to 20 minutes, or until lightly golden brown.
  10. Allow the scones to cool on the baking sheet while preparing the glaze.
  11. Whisk together the lime juice and confectioners’ sugar until smooth. Drizzle over the warm scones before serving.
