Blackberry Lime Scones
Ingredients
Scones
- 2½ cups Adluh® all-purpose flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ⅓ cup granulated sugar
- 2 teaspoons lime zest
- 1 stick (4 ounces) unsalted butter, very cold and cut into small cubes
- 1 large egg, beaten
- ½ cup plus 2 tablespoons whole milk
- 1 cup Certified SC Grown blackberries
Egg Wash
- 1 large egg, beaten
- 1 teaspoon milk or water
- 2 tablespoons granulated sugar
Lime Glaze
- 2 tablespoons fresh lime juice
- ¾ cup powdered sugar
Instructions
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, sugar, and lime zest.
- Cut the butter into the flour mixture using a pastry cutter, two forks, or your fingertips until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg and milk. Add to the flour mixture and stir just until combined.
- Gently fold in the blackberries, being careful not to overmix.
- Turn the dough onto a lightly floured surface and shape it into an 8 inch circle.
- Cut into 8 wedges and transfer to the prepared baking sheet.
- Whisk together the egg wash ingredients. Brush each scone with the egg wash and sprinkle with granulated sugar.
- Bake for 18 to 20 minutes, or until lightly golden brown.
- Allow the scones to cool on the baking sheet while preparing the glaze.
- Whisk together the lime juice and confectioners’ sugar until smooth. Drizzle over the warm scones before serving.
