Slow Cooker Beef and Sweet Potato Stew

Slow Cooker Beef and Sweet Potato Stew

Ingredients

  • 3 pounds beef stew meat, cut into 1-inch cubes
  • ⅓ cup all-purpose flour
  • 1 onion, chopped
  • 4 garlic cloves, crushed
  • 1 large Certified SC Grown sweet potato, peeled and diced
  • 8 red potatoes, cut into bite-sized pieces
  • 2 large carrots, sliced
  • 1 red bell pepper, diced
  • 1½ cups beef broth
  • 1 (14-ounce) can diced tomatoes
  • 1 beef bouillon cube, crushed
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place the beef and flour in a slow cooker and toss until evenly coated.
  2. Add the onion, garlic, sweet potato, red potatoes, carrots, bell pepper, beef broth, diced tomatoes, and bouillon.
  3. Stir to combine.
  4. Cover and cook on Low for 8 to 10 hours or High for 4 to 6 hours.
  5. Taste and season with salt and pepper before serving.
  6. Serve over mashed potatoes or cooked white rice.
