Lowcountry Mussels

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 strips bacon, chopped
  • ½ sweet onion, diced
  • ½ tomato, diced
  • 2 tablespoons unsalted butter
  • ⅓ cup white wine
  • ⅓ cup heavy cream
  • 1 tablespoon Hudson’s Seasoning
  • 25 Prince Edward Island mussels
  • French baguette, for serving

 

Instructions

  1. Heat the olive oil in a large sauté pan over medium heat.
  2. Add the bacon and cook until crisp, rendering the fat.
  3. Add the onion, tomato, and butter. Cook for about 2 minutes, or until the vegetables begin to soften.
  4. Stir in the white wine, heavy cream, and Hudson’s Seasoning.
  5. Add the mussels, cover, and simmer for about 5 minutes, or until the mussels have fully opened.
  6. Discard any mussels that do not open.
  7. Transfer the mussels and broth to a serving bowl.
  8. Serve immediately with slices of French baguette for dipping.
