Blueberry Crumble Bars
Ingredients
Base and Crumble Topping
- 1 cup all purpose flour
- ¾ cup old fashioned oats
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- 1 large egg yolk
- 1 tablespoon packed brown sugar
Blueberry Filling
- 2 cups Certified SC Grown blueberries, fresh or frozen
- 2 tablespoons fresh lemon juice (use 1 tablespoon if using frozen blueberries)
- ¼ cup granulated sugar
- 2 teaspoons cornstarch
Instructions
- Preheat the oven to 350°F. Line an 8 x 8 inch baking pan with parchment paper or lightly greased aluminum foil.
- In a medium bowl, combine the flour, oats, granulated sugar, ¼ cup brown sugar, cinnamon, and salt.
- Stir in the melted butter and egg yolk until evenly combined.
- Reserve 1 cup of the oat mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan.
- In a separate bowl, stir together the blueberries, lemon juice, granulated sugar, and cornstarch. Spread evenly over the crust.
- Stir the remaining tablespoon of brown sugar into the reserved oat mixture. Sprinkle evenly over the blueberry layer.
- Bake for 40 to 45 minutes, or until the filling is bubbling and the topping is golden brown. If using frozen blueberries, bake for 50 to 55 minutes.
- Cool completely before cutting into bars.
Notes
- Cool for at least 3 hours before slicing for the cleanest cuts
