Coca-Cola Cake

Ingredients

Cake
  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 1 cup butter
  • 1 cup Coca-Cola
  • 2 tablespoons unsweetened cocoa powder
  • ½ cup buttermilk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups miniature marshmallows
Frosting
  • ½ cup butter
  • 6 tablespoons Coca-Cola
  • 2 tablespoons unsweetened cocoa powder
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9 × 13 inch baking pan.
  2. Whisk together the flour and sugar in a large bowl.
  3. In a saucepan, combine the butter, Coca-Cola, and cocoa. Bring just to a boil.
  4. Pour the hot mixture over the flour mixture and stir until combined.
  5. Add the buttermilk, eggs, vanilla, baking soda, and salt. Mix until smooth.
  6. Fold in the marshmallows.
  7. Pour into the prepared pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake bakes, prepare the frosting. Melt the butter with the Coca-Cola and cocoa. Remove from the heat and whisk in the confectioners’ sugar and vanilla until smooth. Fold in the pecans.
  9. Spread the warm frosting over the hot cake.

  • Makes one 9 × 13 inch cake.
  • Frost the cake while it is still warm for the signature glossy finish.
