Peach Cobbler

Ingredients

Filling
  • 8 Certified SC Grown peaches, peeled, pitted, and sliced
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
Topping
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup boiling water

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly and transfer to a 2-quart baking dish.
  3. Bake the peaches for 10 minutes.
  4. Meanwhile, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the boiling water until just combined.
  5. Remove the peaches from the oven and drop spoonfuls of topping evenly over the fruit.
  6. Bake for about 30 minutes, or until the topping is golden brown and the filling is bubbling.
  7. Let cool slightly before serving.
