Certified SC Collard Greens
Ingredients
- 2 bunches collard greens
- 1 pound bacon, diced
- ½ onion, diced
- 1 ham hock
- 1 cup cider vinegar
- Hot sauce, to taste
- Chicken stock, as needed
- Salt and black pepper, to taste, if needed
Instructions
- Remove the tough stems from the collard greens and tear the leaves into bite sized pieces.
- Wash the greens thoroughly and drain.
- Cook the bacon in a large stockpot over medium heat until crisp.
- Add the onion and cook until softened, about 3 to 4 minutes.
- Add the collard greens, ham hock, cider vinegar, and hot sauce.
- Pour in enough chicken stock to cover the greens.
- Bring to a simmer.
- Reduce the heat to low and cook for about 2 hours, or until the greens are tender.
- Remove the ham hock. Shred any usable meat and return it to the pot, if desired.
- Taste before adding additional salt, as the bacon, ham hock, and stock may already provide enough seasoning.
Notes
- Serves 8 to 10 as a side dish.
- The cider vinegar may be reduced to ½ cup for a milder flavor.
- The greens can be made a day ahead and reheated before serving.
