Tomato Bacon Jam

Tomato Bacon Jam

Ingredients

  • 1 cup diced bacon
  • 1 cup diced yellow onion
  • 2 cups diced Certified SC Grown tomatoes
  • ½ cup apple cider vinegar
  • ½ cup packed light brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place the bacon in a medium saucepan over medium heat. Cook until the bacon begins to brown and the fat has rendered.
  2. Add the onion and tomatoes. Cook, stirring occasionally, until the onion is softened and the tomatoes begin to break down, about 5 to 7 minutes.
  3. Add the apple cider vinegar and stir, scraping up any browned bits from the bottom of the pan. Simmer until the liquid has reduced by about half.
  4. Stir in the brown sugar, chili powder, and paprika.
  5. Reduce the heat to medium low and simmer, stirring frequently, until the mixture is thick, glossy, and jam like, about 15 to 20 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from the heat and allow to cool slightly before serving, or refrigerate until ready to use.
Notes

Works well as a topping for burgers, sandwiches, crab cakes, biscuits, or crostini.
