Fried Green Tomatoes with Charred Corn Salsa and Local Blue Crab

Ingredients

  • 2 local green tomatoes
  • 3 cups seasoned flour
  • 3 cups panko breadcrumbs
  • 3 cups buttermilk
  • Fresh picked blue crab
  • South Carolina corn, cut from the cob
  • Red bell pepper, small diced
  • Red onion, small diced
  • 1 jalapeño, seeded and small diced
  • 1 tablespoon lime juice
  • 1 tablespoon butter
  • 2 sprigs fresh cilantro
  • Salt and freshly ground black pepper
  • 1 tablespoon of lime juice
  • 1 tablespoon of butter
  • Salt and pepper

Instructions

  1. Slice the tomatoes to your desired thickness.
  2. Dredge each tomato slice in the seasoned flour, dip in the buttermilk, then coat with the panko breadcrumbs.
  3. Fry at 350°F for 3 minutes. Remove and reserve.
  4. In a hot sauté pan, melt the butter. Add the crab, jalapeño, red onion, bell pepper, corn, salt, and pepper. Sauté until the vegetables are tender.
  5. Layer the fried tomatoes with the charred corn and crab mixture.
  6. Finish with the lime juice and fresh cilantro. Serve immediately.
