Carolina Gold Dirty Rice

Ingredients

  • 1 tablespoon vegetable oil
  • ½ cup chopped chicken livers
  • ½ pound finely chopped pork or beef
  • 2 ounces onion, finely diced
  • 1 teaspoon minced garlic
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of cayenne pepper
  • Pinch of paprika
  • ½ cup chicken stock, divided
  • 1 pint cooked Carolina Gold rice
  • 4 tablespoons sliced green onions
  • 4 tablespoons chopped fresh parsley

Instructions

  1. Heat the vegetable oil in a heavy bottomed saucepan over medium high heat.
  2. Add the chicken livers and pork or beef. Sauté until well browned.
  3. Add the onion, garlic, salt, black pepper, cayenne, and paprika.
  4. Continue cooking, stirring frequently, until the onion softens and the mixture is deeply browned.
  5. Deglaze the pan with a small amount of the chicken stock, scraping up any browned bits from the bottom.
  6. Add the remaining chicken stock and the cooked rice.
  7. Stir in the green onions and parsley.
  8. Cook until the rice is hot and the liquid has been absorbed.
  9. Taste and adjust the seasoning before serving.
Notes
  • Makes about 4 cups.
