Collard Greens

Ingredients

  • 3 tablespoons olive oil
  • 2 pounds bacon, diced
  • 1 onion, thinly sliced
  • 2 tablespoons minced garlic
  • 2 bags collard greens, stemmed and roughly chopped
  • 2 cups chicken stock
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat.
  2. Cook the bacon until crisp. Remove with a slotted spoon and set aside.
  3. Add the onion, salt, black pepper, and red pepper flakes to the bacon drippings. Cook until softened.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add the collard greens, chicken stock, and reserved bacon.
  6. Cover and simmer for about 45 minutes, stirring occasionally, until the greens are tender.
  7. Stir in the apple cider vinegar just before serving.
