Squash Casserole

Ingredients

  • 2 pounds Certified SC Grown yellow squash, sliced
  • ½ large onion, chopped
  • 1 sleeve buttery round crackers, crushed
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ¾ cup milk
  • ½ cup butter, melted
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9 x 13-inch baking dish.
  2. Lightly steam the squash and onion for about 5 minutes, until just tender. Drain well.
  3. Combine the crushed crackers and cheddar cheese in a medium bowl.
  4. Place the drained squash and onion in a large bowl and gently fold in half of the cracker and cheese mixture.
  5. In a separate bowl, whisk together the eggs and milk. Add to the squash mixture along with half of the melted butter. Season with salt and pepper and gently combine.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Top with the remaining cracker and cheese mixture and drizzle with the remaining melted butter.
  8. Bake for about 25 minutes, until the casserole is set and the topping is lightly browned.
