Squash Casserole
Ingredients
- 2 pounds Certified SC Grown yellow squash, sliced
- ½ large onion, chopped
- 1 sleeve buttery round crackers, crushed
- 1 cup shredded cheddar cheese
- 2 large eggs
- ¾ cup milk
- ½ cup butter, melted
- Salt and black pepper, to taste
Instructions
- Preheat oven to 400°F. Lightly grease a 9 x 13-inch baking dish.
- Lightly steam the squash and onion for about 5 minutes, until just tender. Drain well.
- Combine the crushed crackers and cheddar cheese in a medium bowl.
- Place the drained squash and onion in a large bowl and gently fold in half of the cracker and cheese mixture.
- In a separate bowl, whisk together the eggs and milk. Add to the squash mixture along with half of the melted butter. Season with salt and pepper and gently combine.
- Spread the mixture evenly in the prepared baking dish.
- Top with the remaining cracker and cheese mixture and drizzle with the remaining melted butter.
- Bake for about 25 minutes, until the casserole is set and the topping is lightly browned.
