Snap Pea and Roasted Radish Herb Salad

Ingredients

  • 1 cup snap peas or snow peas, trimmed and sliced diagonally
  • 1 cup breakfast radishes, halved or quartered
  • 2 tablespoons olive oil, divided
  • ½ teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes, or to taste
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh mint, roughly chopped
  • 2 tablespoons flat-leaf parsley, roughly chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the radishes with 1 tablespoon olive oil, salt, black pepper, and red pepper flakes. Spread onto a baking sheet and roast for 12 to 15 minutes, until just tender but still slightly crisp. Allow to cool slightly.
  3. Meanwhile, blanch the snap peas in boiling water for 30 seconds, then immediately transfer them to an ice bath. Drain well.
  4. In a large bowl, combine the roasted radishes, snap peas, thyme, mint, parsley, and lemon zest.
  5. Drizzle with the remaining olive oil and the lemon juice. Toss gently to combine.
  6. Taste and adjust the seasoning with additional salt, pepper, or red pepper flakes as desired.
  7. Serve immediately.
