Country-Style Collard Greens

Ingredients

  • 2 large bunches collard greens, stems removed and leaves cut into 2 inch pieces
  • 1 smoked ham hock
  • 4 slices bacon, chopped
  • 1 large onion, thinly sliced
  • 8 cups water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons hot sauce
  • 2 tablespoons granulated sugar
  • Salt and black pepper, to taste

Instructions

  1. In a large Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside.
  2. Add the onion to the bacon drippings and cook until softened, about 5 minutes.
  3. Add the ham hock, water, sugar, and hot sauce. Bring to a boil.
  4. Stir in the collard greens, reduce the heat to low, cover, and simmer for about 1½ hours, or until the greens are tender.
  5. Remove the ham hock. Shred the meat, discarding the bone and skin, and return the meat to the pot.
  6. Stir in the reserved bacon and apple cider vinegar.
  7. Season with salt and black pepper to taste before serving.
