Country-Style Collard Greens
Ingredients
- 2 large bunches collard greens, stems removed and leaves cut into 2 inch pieces
- 1 smoked ham hock
- 4 slices bacon, chopped
- 1 large onion, thinly sliced
- 8 cups water
- 2 tablespoons apple cider vinegar
- 2 tablespoons hot sauce
- 2 tablespoons granulated sugar
- Salt and black pepper, to taste
Instructions
- In a large Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside.
- Add the onion to the bacon drippings and cook until softened, about 5 minutes.
- Add the ham hock, water, sugar, and hot sauce. Bring to a boil.
- Stir in the collard greens, reduce the heat to low, cover, and simmer for about 1½ hours, or until the greens are tender.
- Remove the ham hock. Shred the meat, discarding the bone and skin, and return the meat to the pot.
- Stir in the reserved bacon and apple cider vinegar.
- Season with salt and black pepper to taste before serving.
